Leduc-Piedimonte “Private Reserve” Ice Cider
This reserve produced in very limited quantity is made from 100% Cortland apples which have been harvested during the cold days of winter. The apples are left on the tree until they over ripen and then through the effect of successive freezing and thawing the aromas are transformed and intensified. After a slow fermentation at low temperature, it is aged for 36 months in French oak.
Ice cider can replace wonderfully a fine sweet wine to accompany certain dishes or cheeses.
This ice cider has a beautiful golden amber color. The nose first offers notes of Corinthian raisins and brown sugar; at the second nose we discover wonderful aromas of pineapple, wild strawberries, and mangos.
On the palate, the unctuousness is soften by caramelized citrus fruit and apricot flavours rounded out by a light and pleasant acidity with some maple notes at the end.
Pan seared duck foie gras, crème brûlée.
